MAC! AND! CHEESE!!!
That’s what they’re serving up at the brand new Mac and Cheese Food Truck now open in Disney Springs, where it’s all in the name…
You’ll find — for now, in any case — the Mac and Cheese Truck in Exposition Park — the area dedicated to the Disney Food Trucks, right in between Bongos Cuban Cafe and the West Side Starbucks.
The menu, of course, is made up of Mac and Cheese. But several variations on the beloved comfort food keep things interesting…
Now, one thing we want to note before moving on… logistics for the opening day of this brand new truck were a little rocky, while guest interest was high resulting in long lines. Our experience included a time when the ordering system for the new truck went down, and it was fellow trucks to the rescue! We actually placed our orders at the Springs’ Street Tacos Truck.
Then the Mac and Cheese dishes were assembled in the Mac & Cheese Food Truck.
We’re not sure how long this will continue, but wanted to make note so you can be prepared for some potential waits in this opening phase.
Now that that’s out of the way… grab a fork and spoon, and get ready to dig in!
And here’s one more look at that menu before we do…
The Six-Cheese Crunchy Macaroni & Cheese is made with six different cheeses and topped with crunchy cheese puffs.
The cheese mix here is the thickest and richest of all the dishes we tried today. And it tastes terrific.
Personally speaking, though, I just don’t think it needs the Cheetos on top, because the mac and cheese base here stands up on its own. Next time, I think I may request it without.
It’s super tasty, and so rich, in fact, that it’s hard to imagine one person being able to finish.
Chicken Parmesan Macaroni & Cheese is made with parmesan Alfredo sauce and topped with crispy fried chicken (of the classic Disney Counter Service Chicken Breast Nuggets variety!), marinara, Parmesan cheese, and basil.
The macaroni and cheese base here puts the emphasis on parmesan, and the taste of it is quite pronounced in the Alfredo.
Two things to mention are that the dish could’ve used some more mozzarella (I know, “You want MORE CHEESE?” But, yeah!). And the marinara was fairly standard; nothing too remarkable there.
But Disney Chicken Nuggets happen to be one of our favorite things. So while the use of them here was not what we expected, they taste terrific, as always, and make this dish a nice two-fer of Chicken Nuggets AND Mac and Cheese!
The Smoked Brisket Macaroni and Cheese features cheddar and smoked gouda mac topped with smoked brisket, barbecue sauce and onion rings. (It somewhat resembles the similar mac and cheese entrée at Flame Tree Barbecue in Animal Kingdom.)
As far as the toppings go, the hearty serving of beef was excellent. The onion rings, though, could have been crispier. (That said, we’re under the impression that this might just have been due to the opening day rush as we overheard remarks about the Cast waiting on the onion rings.)
The macaroni and cheese base here was probably the tamest in regards to pure cheesy flavor, and we would’ve loved to get more flavor from that fun choice of smoked gouda. But it remains a truly tasty dish overall.
Now, before the Mac and Cheese Truck even opened, a few of the new dishes were tested at the Fantasy Fare Food Truck. These included the Bacon Cheeseburger Macaroni and Cheese, packed with creamy cheddar and American cheese mixed with ground beef and topped with bacon, shredded lettuce, tomato, sliced pickles, ketchup, mustard, and crispy potato sticks.

We were also able to preview the Lobster and Shrimp Macaroni and Cheese featuring lobster, shrimp, and crackers on top of cheddar and Swiss cheese macaroni.

Overall
Hooray for Mac and Cheese!! Yes, it’s a dish we love anyway, but here’s the thing: every dish we’ve tried here truly does taste delicious (with the one exception of the Shrimp & Lobster Macaroni and Cheese, which could use some tweaking). The creativity of the dishes extends to the fact that they’re all made with different cheeses for the base, and you can really taste the differences making the Mac and Cheese Truck a place you could come back too again and have a different delicious experience with another order.
Food Truck Notes
Remember, it can be a little tricky to find the trucks. While you’ll always spot one or two on the West Side, they can park themselves elsewhere. (We’ve occasionally spotted them in the Marketplace right outside the World of Disney store, though that space these days is more often taken by the 4R Cantina Barbacoa Food Truck.)
And note that the trucks often don’t open until later. Most weekdays you’ll likely find them opening as late as 5:00 PM. However, on weekends or during particularly busy seasons (or opening days, like today!) they can open as early as 12:00 Noon.
One thing’s for sure… if you LOVE Mac and Cheese the way we do, you’ll definitely want to try to roll up to the new Mac and Cheese Truck!

So confused! I assumed the brisket would be the usual beef, but apparently it’s pork?
I cannot wait to try a couple of these flavors. They sound amazing !!!!!
Just got home from a week at Disneyworld, enjoyed the flower and garden festival. Thanks for the food suggestions. This is the first for us after 12 trips enjoying food from the booths around Epcot, it was great.
Only negative thing was the crowds.
