There have been lots of memorable dishes from the 2015 Epcot Flower and Garden Festival.
But one that we continue to hear you rave about is a return dish from 2014 — the Piggylicious Cupcake from The Smokehouse: Barbecues and Brews Booth!
The cupcake made a BIG impression on us from the first time we tried it. And it’s definitely addictive, with that sweet salty combination of flavors.
But we all know that the trip to Disney isn’t always possible. And even if it is, the Flower and Garden Festival will wrap up in just a few weeks.
So I’m really happy to share this recipe with you today on the blog! Because once you hear about a Disney cupcake that combines bacon, cake, and maple frosting…well…there’s no way you’re NOT gonna want to make this!
Piggylicious Bacon Cupcake
The Smokehouse Barbecues and Brews Outdoor Kitchen
Makes 24 Cupcakes
Ingredients:
For Cupcakes:
Favorite Yellow Cake Mix
Equal amount of bacon fat to replace oil in mix
12 slices of bacon, cooked crisp and chopped fine
For Maple Cream Cheese Icing:
8-ounce package cream cheese
1/4 cup butter, softened
1 tablespoon real maple syrup, more to taste
2 cups confectioner’s sugar
crushed pretzel twists, for garnish
Instructions:
To make Cupcakes:
Follow directions for cake, replacing oil with bacon fat. Fold in bacon. Bake according to instructions.
To make Maple Cream Cheese Icing:
1. Cream together cream cheese and butter until light and fluffy in a mixing bowl with paddle attachment. Mix in maple syrup.
2. Gradually add confectioner’s sugar until combined.
3. Frost cupcakes and garnish with crushed pretzels.
Yep — that’s it! Easy enough to whip up on a week night or for that bake sale donation you just remembered you had to make. And bake + cake? I think it totally qualifies as breakfast, don’t you?

Those piggylicious cupcakes were the most horrible thing I have tasted in a long time and mine ended up in the trash!

We tried doing it and we did something wrong and they ended up tasting horrible. The bacon overpowered everything way too much! 🙁
I’m interested in trying them … Think i would only do half bacon fat and then use oil also
I made the Piggylicious cupcake recipe into a full two layer cake for a fundraiser cake auction. It was met with mixed acceptance, but the people who tasted it seemed to like it. The problem is if you are expecting sweet you will be disappointed. Personally, I like it better chilled.

LisaMc — I think that’s a great point. That was my first impression of the cupcake at the Festival. It’s definitely not super sweet.
My vegetarian daughter just tasted your disgusting bacon cupcake. Maybe better labeling?????
